Kapenta with Sadza (Zimbabwe)
This is one of the top Zimbabwean traditional delicacies and is pretty easy to prepare. A majority of Zimbabwean families eat this at least twice a week. It’s a simple meal consisting of sardines, tomatoes, onions, curry powder, and maize porridge, which is locally known as sadza.
To prepare Kapenta, first soak sardines in boiling water for ten minutes, and then pat dry them. Heat oil and add your sardines to fry. Once they turn brown, add chopped onions and curry powder. Continue stirring as the onions get fried. After about five minutes, add chopped tomatoes and cowry powder, and then cover the pot to allow tomatoes to cook for three minutes. You can add a little water or just serve it dry. Enjoy it with a piece of sadza.
