In need of some rum inspired cocktail? Here are three recipes to try

You know its vacation time, but most plans are on hold and some still fear traveling amid the current coronavirus pandemic. But there is a way to still imagine yourself on an exotic Caribbean vacation sipping on some rum cocktail by a beach shack this Friday night.

The clue is to make yourself some rum cocktails. Why rum? It is because the Caribbean make the best rum and their cocktail mixtures are to-die-for.

From basic rum cocktails to more intricate ones, here are three of my favorites you can try to spice your Friday happy hour with your friends or family be it virtually or at a socially distanced hangout.

Strawberry Daiquiri

Ingredients

2 ounces light rum

1/2-ounce lime juice (fresh)

1-ounce simple syrup

1 cup ice

3 to 4 strawberries (sliced)

Garnish: fresh strawberry slices

Directions

Gather the ingredients.

In a blender, add the rum, lime juice, simple syrup, ice, and strawberries.

Blend well at high speed until smooth.

Pour into a chilled collins or margarita glass. Garnish with fresh strawberry slices.

Serve and enjoy.

Coco fizz

Ingredients

25ml coconut rum

50ml coconut water

juice of ½ lime

ice

50ml prosecco

Directions

Put the coconut rum, coconut water and lime juice into a cocktail shaker, add ice and shake until the outside of the shaker is icy-cold to the touch. Strain into a chilled coupe glass, top with the Prosecco and serve.

Spice 75

Ingredients

60g golden caster sugar

1 tbsp allspice

200ml rum

90ml lime juice

600ml champagne

orange twist

Directions

Gently warm 60g golden caster sugar in a pan with 30ml water and 1 tbsp allspice. Cook gently until the sugar has dissolved, then leave the mixture to cool. Strain through a sieve lined with a coffee filter (or a double layer of kitchen paper).

Pour 60ml of the spiced syrup into a cocktail shaker along with 200ml rum and 90ml lime juice. Shake with ice and strain between six flute glasses. Top up with 600ml champagne and garnish each with an orange twist.
