Pumpkin fritters

Also known as Pampoen koekies, pumpkin fritters could pass off as a light meal for brunch. It is made by mashing cooked pumpkin and mixing it with some self-raising flour, an egg, a tablespoon of brown sugar and a half teaspoon of vanilla. The fritters are fried till it turns crispy on both sides. It is served with cinnamon mixed with caster sugar and some lemon juice.
