You need to taste Chipsi Mayai, one of Tanzania’s most popular street dishes

On today’s instalment of #FoodieFriday, we spotlight one of the most popular street dishes in Tanzania, Chipsi mayai (means chips and eggs in Swahili). The basic ingredients for this dish include potato chips and fried eggs.

  • 3 Large potatoes
  • Oil for frying
  • 1 tomato – diced
  • Onion – diced
  • 2 eggs
  • Dhania – chopped
  • Dash of milk


  • Peel the potatoes and cut them into the size of french fries
  • Heat enough oil to cover the potatoes and wait until drop of water causes boiling.
  • Put the potatoes in the hot oil turning to cook evenly.
  • Once cooked, remove the french fries and place on a plate.
  • Beat the eggs with a little milk in a bowl and set aside.
  • Heat a tblsp of oil in a frying pan, add the onions and fry until translucent.
  • Add the tomato and allow to cook for a short while.
  • Toss in the dhania stir, followed by the chips and stir.
  • Pour in the egg mixture over the french fries allow to cook for a few minutes pressing in with a spatula.
  • Use a plate to flip over the chips mayai so it can cook on the other side and again press with a spatula.
  • Remove and serve hot with some kachumbari and ketchup.
