Drying
The drying method inhibits the growth of bacteria, yeasts and mold by removing water from food.
In Africa, drying is a common go-to method for preserving food items such as grains, pepper and even fruits.
In Nigeria and other western African countries, cassava tubers are peeled, washed and ground into a mash.
The mash is placed in a porous bag; heavy objects are placed on the bag to remove the water.
The mash hardens and then it is roasted.
The end result is garri. Garri soakings is a porridge that includes cold water, sugar, groundnuts and milk.
Garri can also be used to make various stiff doughs used to eat with soups.
