Kwacoco and Mbanga/Palmnut Soup

This soup, enjoyed in the Congo, has palm nuts, boiled beef, smoked fish and/or stock fish, beef cubes, salt, pepper, ground onion and ground crayfish as condiments.

When the soup has boiled for about 1 hour, the palm oil floats at the top of the boiling soup indicating readiness to add crayfish and smoked fish.

Mbanga soup, when ready, gets served hot with ‘Kwacoco’ (cocoyam served in treated plantain leaves), according to mbambaskitchen.
