Kenyan Maharagwe (spiced coconut bean soup)

The Kenyan Maharagwe soup utilizes common vegetables and spices. The soup is filling, flavourful, and packs an anti-inflammatory punch. While it contains a lot of spices and peppers, it’s not spicy-hot like you’d expect. The coconut milk really tones down the heat while providing some healthful fat to aid in the absorption of fat-soluble vitamins and antioxidant-rich turmeric.

A bottle of ginger paste in the fridge, as well as, a jar of minced garlic, is needed with onions, bell pepper, canned beans, water, diced tomato, coconut milk and kidney beans. Turmeric, cumin, coriander, cardamom, red pepper flakes, jalapeño, salt and black pepper are all added for taste.
