Keri Hilson digs deep into Nigerian eba and edikang ikong soup [Video]

So we can confidently confirm African-American singer and songwriter Keri Hilson loves African food. In a recent video circulating on the internet, the “knock you down” songstress is seen helping herself to some delicious Nigerian eba with edikang ikong soup.

Eba is a very popular staple food made with grated cassava locally known as gari. Edikan ikong, on the other hand, is a vegetable soup popular among the Efik- Ibibio people of Akwa Ibom State and Cross River State in Nigeria.

Ingredients for this highly nutritious and healthy soup include bush meat, beef/ beef tripe, dried fish, crayfish, periwinkles, pumpkin leaves, water leaves, palm oil, pepper, salt and other local spices. I surely do know what I’m going to order the next time I visit a Nigerian restaurant. Tried it before, how does it taste like?
