Tubaani or steamed cowpea pudding is a staple in Ghana’s communities in the north.
This one-pot meal is steamed and served with caramelized onion and suya spice or powdered chili. Tubaani usually makes an appearance in any typical party in the north, as well as, being an appropriate vegan meal.
Prep Time: 10 minutes, Cook Time: 30 minutes, Serves: 2 to 4 people
- 2 Cups of Beans Powder
- 1 Tsp of Ground Salt Petre
- 1 Tbsp of Salt
For the Wrap:
- Katemfe leaves
In a mixing bowl, mix beans powder, salt and salt petre.
Then add water and mix into a smooth consistency.
Scoop a spoonful into a katemfe leaf, wrap and set aside.
Continue the process with the remaining mixture.
Bring water to a boil, place a splatter guard on the saucepan, then carefully place the wrapped mixture on the splatter guard and cover to steam.
Let cook for 30 minutes and take off heat.
Tubaani ready to serve.
