Fatira
Fatira is an Ethiopian breakfast street food that is their version of wheat flour pancake. Traditionally, it is served with scrambled eggs mixed with vegetables and or honey dip. Fatira dough is made with flour, salt and water and a little oil to improve elasticity.
The dough is cut into small pieces and then stretched into thin sheets which are folded into squares and then cooked over an iron cast grill on both sides.
