If you are a first time visitor to Nigeria, make a dash to the nearest Suya spot as soon as you set foot in the country. The delicacy is made from finely cut slices of meat—usually cattle—steeped in a combination of local spices and slowly grilled over an open fire. The unique taste of Suya is in its preparation, which is done almost exclusively by seasoned chefs from Nigeria’s Hausa-speaking northern region.
