7 ancient yet timeless methods of food preservation used in present-day Africa

Africa is the bedrock of civilization so it only makes sense that many innovations arose from the continent.

Before modern-day refrigeration, Egyptians kept water cool by putting boiled water in shallow earthen jars then placing them on their roofs while they slept at night.  Slaves were tasked with moistening the exterior of the jars; the evaporation process that ensued cooled the water.

Other food items were preserved by various means such as clay pots, smoking and drying of foods.
