Smoking fish and meat in Africa not only gave a distinct and delicious flavor to food, it helped in keeping it fresh and edible for longer periods of time.

For those who catch, harvest and sell fish it is imperative to lessen the chances of their catch spoiling which can equal up to 25% globally.
