Millet Porridge

Millet Porridge is another popular porridge that is popularly taken with locally prepared doughnuts, bread or koose (spicy beans fritters). The millet is fermented and boiled with all sorts of African spices that give it a dark and peppery taste. The millet is blended with cloves, ginger, guinea pepper, black peppercorn until it is smooth. It is then left in water overnight and then the water is drained and boiled and becomes a thick paste. There are other more traditional ways of making this porridge as well as easier and innovative ways. The porridge is popularly known as Hausa Koko in Ghana or Kunu Koko in Nigeria. It is served when mixed with sugar. It is best eaten while hot and can be served with groundnuts.
