Boukha

‘Boukha’ is a distilled beverage produced from figs. It is indigenous to Libya and Tunisia, where most of it is still produced today. The name ‘Boukha’ means ‘alcohol vapour’ in Judeo-Tunisian Arabic. It is made by simply distilling fermented Mediterranean fig juice or most commonly dates in Libya. Its alcohol percentage ranges between 36 and 40 per cent.

‘Boukha’ can be consumed straight at room temperature or cold, or be used as the base for different kinds of cocktails. Some even include it in fruit salads.
