Suya being prepared

Spicy marinated meat cooked on skewers

Known as Suya in Nigeria and Chichinga in Ghana, this very popular street food is available all year round. With meat variations ranging from beef, gizzards, mutton, chicken, guinea fowls, sausages and others, this spicy meat threaded on skewers and grilled over a gentle heat is usually served with sliced onions and a chilli and spicy sauce or powder.

It is very popular among the Hausa people in northern Nigeria, Cameroon, Ghana, Niger and some parts of Sudan. This threaded meat can be likened to the Afra of Gambia, Guinea and Guinea Bissau, Dibi of Senegal, and the Mishkaki in most of Eastern Africa.
